I was looking at the RS125 for my wife(she is tiny and loves to race) and I want to get her a street bike she would be comfortable. the rep at the dealership stated that in some states if you put on the mirrors and signals you could get it registered. Has anyone had any luck doing that? I think I would have fun hammering it for track days but I already have two for that.

any advice would be great. I dont want to get her a Ninja 250....

Yes, some people are getting them registered and legal. Some shops are selling them either fully equipped, or getting the necessary parts for a conversion. It all depends on your shop, your state, your confidence, and your ability not to say too much about it after the fact. I personally think the government's stance on messing with a few two strokes is bullshit, but there are people out there who would love to piss on your parade.
Good luck.

Thats almost like asking for a good drug dealer.

I looked at the RS125 at AF1. They told me they were able to get them titled and registered in Texas. Cost was +$600 to pay for the lighting and wiring harness.
