Peg running way cold? or bad thermostat?

Riding home from work today, my Peg was running below 40, seemed like the guage may have been bottomed out while riding and even sitting in traffic. Then it would occassionally rise up to 50 or so, then go back down again... I think it's running rich since jetting (will likely put original main jet back in due to 27 MPG), but not usually this cold. Bad thermostat I suspect, anyone have any suggestions otherwise?

Check the temperature sensor, my started showing all kind of temperature ranges so I had to change it.

Haven't checked it yet, seems like the temp changes between 30 to 50 and it seems the change quickly for no reason. Think it's OK to ride in the meantime? Could it overheat or should the thermostat in the radiator still trip the fan to turn on at around 90?

Temperature sensor and fan switch are not connected, so fan switch will switch the fan on 90°C.
Also, check the wires and clean connectors for the sensor first, maybe it is only bad contact.
In my experience, it is usually the simplest and dumbest thing that is causing the problems...

Mislav, you were right. Bad connection. The wire connectors on this bike have a way of working loose. Thanks much!!
